Native To: Europe

Basic History: Sorrel is also known as spinach dock or simply “dock.” Sorrel is the cultivated variety and dock grows wild. Europeans used sorrel to fight scurvy because it contains Vitamin C. It was also used as an internal body cleanser (as a laxative) as well as an astringent for blisters, cuts and bruises.

Culinary Uses: Sorrel stems and leaves are edible. The leaves may also be pureed in soups and sauces or added to salads.

Flavor and Taste: Sorrel has a bitter, citrus taste and a pungent, bitter, lemony scent.
