Basic History: Mint has myriad species such as peppermint, spearmint, pineapple mint, apple mint, and chocolate mint to name a few. In Greek mythology, the nymph Minthe was changed to an herb who released her powerful fragrance when she was trod upon.

Culinary Uses: Mint, usually in the form of tea, can help relieve digestive problems, headaches, colds, fevers and other ailments. In the kitchen, it is commonly used in beverages, ice cream, candies and syrups. It is a popular accompaniment to lamb, veal, lentils, eggplant and cracked wheat salads.

Flavor and Taste: Mint has cool and crisp menthol and camphor flavors and scents and has a subtle, crisp aftertaste.
