Mexican Mango Season: Time to Cook!

The deep perfume sensual scent and flavor of mangoes is one in which we cannot resist. They are one of the most widely consumed fruits in the entire world! Growing throughout the world in tropical and sub tropical regions. Originating from India more than 4,000 years ago and spread around the globe quickly by Buddhist monks, Persians, Portuguese sailors, European slave traders, and Spanish settlers. (And now Ger-Nis!!) Lending their flavor to cuisines from all throughout the world and running rapid through fusion cooking everywhere.

There are more than 1000 variety of mangoes in the world, commercially only six are relevant. When traveling to sub tropical and tropical lands be sure to check out the different varieties with exotic flavors and colors.  The mango is the only commodity not produced commercially in the USA with a USDA grade standard and specifications.  The USA is one of if not the largest mango consumer in the world.

Mangoes are loaded with antioxidants, vitamin A, and vitamin C and contain a large quantity of potassium as well as fiber.  Mexican Mangoes contain the highest fiber content.  Mexico offers smooth buttery atlufos which are deep yellowish orange in color, slightly sweet yellow flesh Tommy Atkins.  The versatility of the Mexican mango lends itself to cooking quite well.  Whether it be savory or sweet the possibilities are endless.  Magazine, the internet and cookbooks are filled with recipes both elaborate and basic for the mango, so go out buy some mangoes and cook, it’s time to cook with mangoes!

You can also enjoy them just simply as is, here is the basic hot to peel and cut a mango speech:

Slice both ends off the mango, revealing the long, slender seed inside. Set the fruit upright on a work surface and remove the skin with a sharp knife. With the seed perpendicular to you, slice the fruit from both sides of the seed, yielding two large pieces. Turn the seed parallel to you and slice the two smaller pieces of fruit from each side. Cut the fruit into the desired shape.
