How do you suggest approaching the use of fresh herbs as a stuffing for, say, mushroom cap hors’d’oeuvres or in dolmas? Lara, Chicago, IL
The techniques for these two kinds of stuffing are very different from one another. While for the mushrooms, you’ve got to think of a heavy approach to balance the thick, hearty nature of a mushroom using a rich blend of rosemary, thyme, oregano, and marjoram, for the dolmas you must lighten up considering the delicate grape leaves. For the dolmas, use fresh parsley and/or mint to achieve the flavor you’re looking for.
