Who’s The Grower: Satur Farms

In 1997, chef Eberhard Müller and his wife Paulette Satur decided to grow their own vegetables and herbs for the pure and simple satisfaction of enjoying flavor, coloring and overall quality that were better than the products they were purchasing. What started on approximately two acres of land on eastern Long Island as simply an opportunity to provide the chef and some of his colleagues with higher quality vegetables and herbs has expanded to over 200 acres, and an influence that reaches well beyond the New York area.

Satur farms’ salad greens and baby vegetables are served in most of the finest restaurants in the New York area, and their clamshell lettuce is seen all over the local retail sector as well as being included in Fresh Direct.

Their attention to detail is seen in the variety of products they choose to grow and the techniques they employ from harvesting to packaging. Nature’s beautiful weather, from spring until fall, and the sandy soil are perfect for the things they grow best: salad mixes, baby lettuces and herbs.

What started out as an idea to grow items that are staples of the New York food scene but that tend to suffer the most from long and often delayed logistics has become a booming business. Satur Farms is now expanding into baby vegetables with an extended season of winter vegetables like squash and leeks. They have also started to work together with an Arizona grower in order to offer restaurants winter items that simply cannot flourish in the New York cold.

With over 60 different varieties of produce and a passion that is second to none, this local dynamic duo is an amazing example of what can be accomplished in local farming. Satur Farms feeds the community with both food and a medium for creativity. The farms are sure to keep busy and continue to expand for a long time to come.
