Seasonal Entertaining: Spring Brunch
There is nothing like a weekend brunch to herald the beginning of warmer weather. Here in New York, neighbors and friends emerge from winter’s hibernation to congregate on stoops, front porches, sidewalk cafés, and of course, farmers markets. Forget meeting at a local restaurant for high-priced breakfast fare – with a little bit of menu planning, you can pull off an unforgettable brunch that doesn’t leave you sleepless and harried.

The best brunches begin with the freshest ingredients. There is also a subtle flavor that goes along with breakfast/brunch that gently awakens the palate and appetite. Needless to say, there are no better subtle and fresh flavor enhancers than herbs themselves. They add undertones of earthiness, spiciness, and even saltiness.
Start with a quiche as one of your centerpieces. Once you start out with a basic quiche custard, you can use myriad flavor combinations. Try chives, chervil and some grated Swiss gruyere for something that is both hearty and light. Or wow your guests by adding a couple of tablespoons of your favorite pesto to your pastry crust. Fill it with smoked salmon, dill, and parsley. The pastry can be rolled out in your quiche pan the day before and refrigerated (or even weeks before and frozen). Basic custard can also be made the day before and refrigerated. On party day, add your herbs and whatever else you desire to the custard, fill your pastry shell, and bake.

For some more healthful options, try a tofu scramble. Fresh herbs really make this dish a delicious alternative to regular eggs. A simple and lovely cream cheese or goat cheese ball with fresh herbs is always an eye catcher on any cheese plate. It is simple, inexpensive and actually best when done a few days in advance. For a splash of green, toss about three handfuls of rocolla and two teaspoons of coarsely chopped savory, with one tablespoon olive oil, and one teaspoon lemon juice. Place small bunches in between your various cheeses. The bite will add surprise and contrast.
For a little something sweet, there is nothing better than a fresh fruit salad to complete your meal. Keep your guests guessing with a few tablespoons of our red basil simple syrup added to your favorite medley of fruit. Garnish with one teaspoon of chopped fresh mint and some sprigs for garnish.
